Rice is the most important cereal, being a staple food for over 50% of the world's population. As far back as 3500 B.C., Rice, 'The bread of Asia', was cultivated in the area which is now known as Thailand. The ancient Greeks and Romans considered rice to be a delicacy.
Nowadays, over 8,000 different types of rice are known. Rice has become as indispensable part of our cuisine, as this popular staple can be prepared in many different ways and combine with a whole variety of ingredients. Rice has a hidh nutritional value and can be eaten either hot or cold, as a side-dish, in a main course, or as a dessert. Rice is ideal for slimmer, as it's volume increases by up to three times due to water absorption during cooking. This makes it very filling. It's carbohydrate content gives a lasting feeling of fullness.
In addition to protien, rice contains fat and carbohydrate (Fibre), valuable minerals and vitamins (above all, the B Vitamins). Rice has been the staple food through out the world for centuries. Rice is a complex carbohydrate. Complex carbohydrates are stored in muscles and released as energy when needed. Nutritionists recommend that over half the calories we consume should come from complex carbohydrates. Rice protein, when compared to that of other grains, is considered one of the highest quality proteins. It has all eight of the essential amino acids, necessary building blocks for building strong muscles. Rice is also a good source of other essential nutrients- thiamin, riboflavin, niacin, phosphorus, iron, and potassium. In addition to all this, it has no fat, no cholesterol and no sodium and is non-allergenic and gluten free. Rice constitutes about 21% of the total fat consumed and ½ a cup of cooked rice serving has only 82 calories.
Brown and White rice are both nutritious in their own rights. While brown rice provides slightly more fiber, Vitamin E, phosphorus, and calcium than white rice, white rice actually provides more thiamin and iron than brown rice.

Brown Rice is the least processed form of rice, as the kernels of rice have had only the hull removed. The light brown color of brown rice is caused by the presence of bran layers which are rich in minerals and vitamins, especially the B-complex group. With a natural aroma and flavor similar to that of roasted nuts or popcorn, it is chewier than white rice, and slightly more nutritious, but takes longer to cook. Brown rice may be eaten as is or milled into regular-milled white rice.
